This is one of our most beloved experiences, so it only made sense that it would be one of the first that we adapt using our new Covid Protocol. Please make sure to go over our protocol and to only reserve an experience if you´re in complete agreement with the terms. We are working hard to keep everyone in our community safe, from our visitors to our translators and hosts, to family members and other people on-site at our experiences. Our commitment to health is of the utmost importance, and requires that we all work together in community! Doña Andrea and Don Noé have set up a brand new open-air space in Etla to host these experiences in a low-risk environment accordingly.
For this experience, we are journeying out to Etla to see our favorite vendors from the Pochote Organic Market, Andrea and Noé. On their farm nestled into the valley of Etla, they utilize their neighbor´s cow milk to make their own quesillo, queso fresco, and requesón.
Apart from that, Andrea is a shining star in the kitchen, and makes such an array of delectable things that you’ll inevitably leave their home stuffed to to the brim. If you’d like a taste, stop by and see them at the Pochote organic market (now located in a great new outdoor space in Colonia Reforma) any weekend. Don´t forget to tell them we sent you!

What to Expect
Step One: Read our Covid Protocol. If you agree with these terms and practices, write to us and request this experience, telling us how many people are in your small group and what your dates of availability are. This experience is easiest to arrange within the host’s availability, which is generally Mondays, Tuesdays, or Wednesdays (exceptions can be made for larger groups or with advanced notice). Let us know where we’re staying so that we can arrange to pick you up on the agreed-upon date.
Step Two: Once we’ve found a date that works for our hosts and for your group, we will send you a Paypal request for a deposit for your experience. This deposit is non-refundable. In case of an emergency with our hosts, we will do our best to reschedule with you at a mutually-convenient time. If that is not possible, we will refund your deposit.
Step Three: We will pick you up around 9 a.m. and arrive in Etla by 10 a.m. We will get to learn about rural life in Etla, and what it requires to turn the free-range eggs, milk, and other ingredients their farm produces into a delicious meal.
In this particular experience, we´ll be focusing on producing the local favourite: handmade quesillo. We´ll transform the milk from Andrea’s neighbors into the delicious stringy cheese that Oaxaca is so famous for.
At some point we´ll get hungry, and we´ll feast down on a delicious homemade breakfast of seasonal fruit, atole, and a varying seasonal menu, for example, tamales/chilaquiles/memelitas, depending on what´s on hand. Regardless of the menu of the day, Andrea´s food never disappoints.
You´ll get to take home your quesillo as a souvenir to remind you of this delicious day trip.

Logistics and Cost
Time Involvement – 4.5 Hours
Transportation – Round trip from/to your home, hotel, or a central location.
Costs and Minimums – 1,500 MXN per person if you are signing up two people. 1,200 MXN if you are signing up 3 or more people.
Wondering why our costs have changed recently? We have gone through an elaborate process of taking the utmost precaution to protect ourselves and our community during these trying times. Part of this effort was a heavy investment into sanitization products, application equipment and other health-related measures. The largest new factor behind our new costs is the reduction of our vehicular capacity for your safety and for the safety of our drivers and translators. This requires additional vehicles, drivers, gas, and maintenance. Your health is important to us though, as is the sustainability of our project. Part of sustainability requires us to implement self-care so that we can continue offering experiences, in addition to taking any and every measure possible to reduce risk for our guests.
There is a minimum of 2 people for this experience. If you are a single person who would like to sign up for this experience, you can cover the minimum cost of 2 people or write to us to see when we have this experience on the calendar with that minimum requirement already met.
