Escape the city and discover the flavors, traditions, and hospitality of rural Oaxaca during this authentic tamale cooking class with Doña Juana and her family in the small farming community of Yatareni.

Just a short drive from Oaxaca City, you'll leave behind the colonial streets and step into a peaceful countryside where generations of families have cultivated the land using the traditional milpa system—a sustainable method of growing corn, beans, and squash together. Surrounded by fruit trees, fresh air, chickens, friendly dogs, and an especially vocal turkey, you'll experience a side of Oaxaca that few visitors ever have the chance to see.

Doña Juana and her family rely on their land to feed not only their four growing children but also the many friends and relatives who are always welcome around their table. Their warmth and generosity are as memorable as the incredible food you'll prepare together.

After much delicious deliberation, we selected four of Doña Juana's favorite family recipes to share with our guests:

  • Black Bean Tamales – a timeless Oaxacan classic.
  • Chepil Tamales – featuring chepil, an aromatic herb native to Oaxaca that gives these tamales their distinctive regional flavor.
  • Tamales de Rajas – filled with roasted chile strips and Oaxaca's famous string cheese, known locally as quesillo.
  • A Seasonal Tamal – prepared with fresh ingredients available during your visit.

Your experience begins with a guided walk around the family's property, where you'll learn about the crops, animals, and daily life that sustain this close-knit household. From there, you'll gather in the family kitchen to begin preparing your tamales.

To make this experience possible within a single day, Doña Juana has already taken the freshly harvested corn to the local mill to be ground into masa. She'll guide you step by step through the traditional tamale-making process, sharing techniques that have been passed down through generations. You'll prepare each variety by hand, learning not just the recipes but also the cultural significance of tamales in Oaxacan family life and celebrations.

As your tamales slowly steam over a traditional wood-fired stove, you'll enjoy refreshing agua de sabor and gather around the table for a generous home-cooked meal featuring additional tamales and seasonal dishes lovingly prepared by Doña Juana.
